In our household we have two ways we always eat salmon. One: H-E-B Fiesta Jalapeño Salmon Burgers. Two: With Tony Creole’s seasoning in the air fryer. I stumbled upon an air fryer salmon bites recipe on TikTok last week and decided it was about time we switched up our salmon rotation! This is my take on the bites - nice and crispy with a little yum yum sauce, avocado for healthy fat and a few veggies because who get’s enough of those?
Ingredients
Crispy Salmon Bites
1lb Skinless Salmon, Skinned and Cubed (ask your fishmonger to do this for you!)
2 Garlic Cloves, Minced
1tbsp Olive or Avocado Oil
1tbsp Lemon Juice
1/2tsp Each: Smoked Paprika, Garlic Powder, Onion Powder, Ginger
Salt and Pepper to Taste
Asian Cucumber Salad
1 Cucumber, Peeled and Diced
1/2c Rice Vinegar
2tsp Sesame Oil
1tbsp Soy Sauce
1/2 tsp Garlic Powder
1tbsp Honey
Additions
Sticky White Rice
1 Avocado, Sliced
1 Head of Broccoli, Steamed
Yum-Yum Sauce
Sesame Seeds
Chopped Green Onions
Instructions
Asian Cucumber Salad
Peel and dice cucumber. Whisk rice vinegar, sesame oil, soy sauce, garlic, and syrup. Pour marinade over cucumber, mix, and refrigerate before serving (at least one hour - the longer, the stronger).
Crispy Salmon Bites
Season cubed salmon with minced garlic, oil, lemon juice, and spices. Lay on unlined air fryer basket and cook for 9-15 minutes on 400* until crispy. Carefully flip halfway.
For Serving
Serve salmon bites over sticky white rice, Asian cucumber salad, avocado, and broccoli. Add sesame seeds and green onions to taste.
