Memorial Day is here, marking the start of summer here in Texas! With intense heat I find myself reaching for more fruits and veggies - and this light summer salad is perfect for when you need to refuel but don’t want something heavy. With homemade balsamic dressing, you can avoid extra processed sugar and expensive dressings as well!
Ingredients
Salad
1 Bag Spring Lettuce Mix
1 Handful of Strawberries, Chopped
1 Handful of Blueberries
1 Avocado, Cubed
1/2 cup Goat Cheese (More/Less Based on Preference)
Dressing
1/2 cup Olive Oil
1/4 cup Balsamic Vinegar
1 Garlic Clove, Minced
1-2 tbsp Honey
2 tsp Dijon Mustard
Cracked Pepper to Taste
Sea Salt to Taste
Instructions
Combine dressing ingredients in a bowl. Whisk together until emulsified and set aside.
Chop strawberries and avocado. Mix with lettuce, blueberries, and goat cheese.
Drizzle homemade balsamic dressing over salad, toss, and top with pumpkin seeds.
